Lunch should always be a mystery to me … i believe then only when we eagerly wait to open our tiffin and find the most amazing food and you happily enjoy every bit of it……

Usually morning times are like marathon for me , wake up early prepare breakfast , pack your kids tiffin , feed them , Prepare lunch for your husband and pack it ….. very limited time but i always enjoy it to the fullest , If you ask me i always like to cook in the morning 🙂

Today i am sharing with you a recipe i made for my husband’s lunch Box

I made Coconut Rice with Chicken roast and Pomegranate Raita

Actually when i cooked i didn’t feel that beautiful but when i took picture everything blended out very well 🙂

So recipe is as follow

                                   Pomegranate Raita


  • Pomegranate -1 cup
  • Curd-2 cups
  • Jeera powder- 1/4 tsp (as required){ Those who deosn’t like the flavor can skip this}
  • Pepper- a pinch
  • Coriander leaf finely chopped


  • In to a bowl add curd, pepper, salt and Jeera powder mix everything well .
  • Add Pomegranate seeds,  slowly  fold without breaking  the seeds add coriander leaves if needed and keep refrigerated until needed

                        Easy chicken Roast


  • Chicken -1/2 kg
  • Chili powder- 2 tbsp
  • Coriander powder-2 tbsp
  • Turmeric-1/2 tsp
  • Garam Masala powder-1 Tbsp
  • Pepper powder-2 tsp
  • Salt- as required
  • Oil
  • cloves,cardamon pods cinnamon sticks – as required
  • Onion- 2 (make paste)
  • Tomato -2(Make paste)
  • Ginger garlic and green chili – make a paste 1tbsp
  • Curry leaves and Coriander leaves as required


  • First wash the chicken pieces well
  • Marinate using chili powder, coriander powder, pepper powder, garam masala and salt .
  • Keep it aside
  • In a heavy bottom pan /kadai heat some oil
  •  Add cloves, cardamon and cinnamon sticks .
  • Add in onion paste saute well (Be careful as it may splutter) .
  • Saute for a while and then add in the ginger garlic and chili paste .
  • Saute until raw smell goes and add in the the tomato Paste.
  • Saute and close with the lid for sometime
  • Now add in the chicken marinated pieces.
  • Mix everything well and close with the lid
  • Do not add any water , water will release from the chicken ,We are choosing a dum method for cooking the chicken pieces.
  • keep the heat in simmer and let it cook for 15 to 20 mins. keep stirring in between .
  • You will end in very soft chicken roast , Garnish with curry leaves and coriander leaves .

Serve with Coconut Rice

                                     Coconut Rice 


  • Basmati rice- cooked  2 cups
  • Ghee- as required
  • Urad dal , mustard seeds – required for spluttering
  • Dry chili
  • Coconut Grated – 1 cup


  • In a Kadai  Heat some Ghee
  • Add mustard seeds once splutter add urad dal and dry chili , add the grated coconut (Keep the flame in medium while adding the cocnut)
  • Saute for a while
  • Add rice and mix well . Add salt if Required
  • Switch off flame  and let it rest for a while.
  • garnish with coriander Leaves

Serve  🙂
