Mud Pot Egg Roast

Kerala is very famous for its breakfast varieties , and the most common item Appam and Egg roast . Boiled eggs are sauted in Caramelized Onion Gravy , topped with some curry leaves …..the flavor is marvelous and best when eaten with hot thin lacy appam……………  hmm mm , speechless!!!



Ohhh!! while writing itself my mouth got filled with water  🙂  and those who have tasted this will definitely understand  .


When ever you cook any food in Mud pod it gives a special taste , for certain dishes i only use Mudpot , Esp for fish curry . Now a days  a number of dishes in restaurants are available in mud pot , like Chicken Chatti Curry *( Chatti is the malayalam word of Mud pot ) , Fish Chatti curry …etc etc.


One Fine morning i was planning to make egg roast and thought y don’t i try this in a chatti (Mud pot) , i definitely knew that it will be awesome and it was 🙂 This recipe is very simple and if you don’t have a mud pot you can definitely make it in a nonstick pan  Not making you drooling anymore , lets move on to our recipe


                                     Mud Pot Egg Roast 


  • Boiled Eggs-4
  • Onions  Large – Thinly Sliced -4
  • Tomato – Thinly sliced -2
  • Green chili – split from middle -2
  • Ginger garlic Julienne- 1 tsp
  • Curry leaves- as required
  • Chili powder- 2 tbsp
  • Coriander powder- 1 tbsp
  • Turmeric Powder-1 tsp
  • Pepper powder – little for flavor
  • Garam masala – little for flavor
  • Salt as required
  • oil
  • Mustard seeds
  • Dry chili


  • Heat a  Mud pot/ Chatti
  • once hot add oil
  • Add in mustard seeds
  • Once popped add dry chili and few curry leaves
  • Add in onions and saute well
  • add in green chili and ginger garlic
  • saute well, if oil is required add more as it is mud pot the gravy  may stick to the bottom if there is less oil
  • Add tomato and saute well
  • when everything is mixed well start adding the masala’s one by one by continuously stirring
  • Add Salt
  • Add little water and mix well
  • once the raw smell is gone add the boiled eggs and top with curry leave
  • Simmer for sometime

Serve Hot with Appams
