Friday is very lazy day for me, i don’t know about you guys but i don’t like spending too much time inside the kitchen especially when your family is around. This curry is made on days where i hate to do cooking as it easy 3 stages make paste, saute , simmer by adding egg/veges done that’s all 🙂

Easy Egg Masala
Ingredients
- Boiled Eggs- 4
- Onions-2
- Ginger – 1 pod
- Garlic- a small piece
- Tomato -2
- Tomato sauce -1 tsp
- Green chili- 1 small
- Red chili Powder – 2 tsp
- Turmeric powder- 1/4 tsp
- Coriander powder- 1/2 tsp
- Fennel Powder- 1/2 tsp
- Oil – as required
- Mustard seeds – 1/2 tsp
- Dry chili – 2
- Curry leaves/ Coriander leaves for garnishing- few
- Salt to taste
Method
- Into a mixer add washed and peeled onions, garlic, ginger and green chili. Make a smooth paste and keep this aside.
- Now grind the tomatoes and make a paste, keep that aside also
- Heat a pan, add oil , mustard seeds once popped add in dry chili, curry leaves.
- Then add in Onion paste , saute for a while. Once blend well add Chili powder, turmeric, coriander powder . Mix well until raw flavor disappears.
- Then add in the tomato paste and tomato sauce , Mix well
- Add in the Boiled eggs ,May add water if required.
- Simmer for few mins .
- Switch off flame
Serve with Appam/Roti/Rice
